Get some gloves which increase resistance in the water. You'll have to put more energy into swimming that way.
A weight belt would make it more interesting too.

This is a bit of a bugbear of mine! People go to excruciating lengths and sacrifices to lose weight and then put it all back on. Forget the word 'dieting', it's a marketing ploy to make money. Look at it as a change of lifestyle. Yes that's a bit daunting but if you want to lose weight and keep it off then that's what you need to do.
The inability to be consistent with a regime that gets your weight down is the cause of people gaining lost weight. No **** Sherlock I hear you say! It's simple but that's the reason. If you start a regime of eating differently (usually less) and taking regular exercise, then you should bear in mind that you will need to do it indefinitely. No slipping back to your old lifestyle once you get to your desired weight.
To the OP, just do what you did before but keep it going. It obviously worked as you lost three stone. Infact you are probably better placed to answer your own query. Furthermore you should share what your routine consisted of as it may be of help to others.

I don't go on diets, because that is BS to the highest degree.I didn't get into the routine of going regularly to the gym & i had to tiny amount of food to exercise with sometimes.Which made me hungry again.Became a little too thin ( gaunt really ).Went on holiday after that, then had kerfuffle with tablets.Didn't do much in the holidays and ate crap until last week.Basically i changed the food i was eating to healthy food without additives in etc.

agree its not a diet thats needed as that assumes there will be an "off period" where you can do as you wish.
its a lifestyle change - yoyo-ing weight is the result of diets commonly.
lifestyle change doesnt mean to have to totally eliminate nice, or calorifcally rich foods (as per many diets), just you need to understand what your putting into yourself, and your genetic response to nutrition and also excersise.

wear long shorts, wear a couple of pairs of shorts that will increase your drag. really you just need to do a lot of lengths and at a decent pace but do vary the pace and build it up.
Can you swim different strokes, if so, what?
Have you considered water polo???

to answer yuor question
you need to work out pre and post excersise nutrition with referance to total daily kcals and macro split.
eating protein and carbs pre and post excersise may well be sound, but if the rest of the days diet is simple suars/fats and plenty of them, then those 2 meals possibly wont make much differance mate
