use TMPEG myself. easy to use and produces good results. there are faster enciders out there but i like 1. the ease of use and 2. the options available. you can get an evaluation copy from the pegasus site here

if your going to put it to dvd then use a program called nero vision express 2 as it does it all for you in one go
