Specialized last year models ~(or even current) you can get hard tails for this price. Cable disc brakes are good enough for me..
e.g.
Specialized Rockhopper Disc Satin Silver 09 - Satin Silver 19in

My Genesis Core 01 has Hydraulic brakes and was a pinch under £500 - I got it on cycle scheme so was a bit cheaper again. Very good bike but I changed the front fork to a lockable one.

£500 should get you a good spec hardtail. If you are planning on riding your bike with a bit of vigour then I would go for hydraulic discs over cable discs every time.

Just get a previous model.
I bought a new Kona Hoss in 2008 for £700, and the same bike can now be bought new for £489. It's for "bigger riders" so may not be good for you, but any of the last seasons bikes will be good.
Check out Mailorder sale and discounted bikes GT Mongoose Giant Kona Diamondback Trek, Cheapest sale offer cycles :: Pauls Cycles IIRC.
Or just buy second hand as above. Mine has only done 31 miles ( ) as I don't get much spare time so if you could buy something like that you are laughing as mine is still as new.

depends where you live and what you think'll you do.
giant are a cheap bike maker of reasonably good bikes. £350 to £400 would get a decent hardtail, hydo brakes.
wouldn't bother with cable because the cost between the two is very slight.
lockable forks are a real bonus------ but for that money- they'll just be the type that lock on the fork, rather than being handlebar controlled.
ebay can be a good source though- although funnily enough bike shops will beat ebay as some people think their secondhand bike is worth a fortune !

I bought a GT from Evans Cycles with cable discs for commuting (on towpaths) and it works fine.
However compared to the Cannondale I'm building up and the old school '96 Klein Attitude I ride on special occasions it weighs a ton and has pretty cheap components.
It all works well enough though. My advice - as long as you don't expect race quality at those kinds of prices and use for light off road only, it should be OK.
