Not good news I'm afraid.
First of all you need to find out which refrigerant you've got. It may be somewhere on the compressor or you could find out from Subaru. The problem is some refigerants are CFC's, not friendly to the ozone, so theoreticly, you need a reclaim unit to pump out the gas. If you're not bothered about being green you can depressurise the system by just cracking a hose or sticking a screwdriver in the LP side fill point. (remove the little blue cap with L on it.)Careful, things will get burny cold. This however, this sort of defeats the purpose, as you'd still need gas and the gear to recharge the system once you're done, so best take it to a specialist for the following reasons A) you want your aircon to work again? B) you don't want to risk burning yourself and C) You don't want to risk damageing the environment, not knowing the type of gas you're venting. (It is a criminal offence with potentially huge fine and possible imprisonment.)

Could only hazard a guess.... 2 or 3lbs maybe? There doesn't seem to be any response to your compressor pipes question... I'd get a non aircon belt for the rest of the setup before you start just to be on the safe side.

Yes I would plug them off as a minimum. Not sure on the Scooby but most aircon compressors are oil filled, some of the oil usually works round the aircon system with the refiegrant and returns to the compressor. If it were left open, the oil MAY escape. It is most likely that the compressor bearings are lubricated with the same oil. No prizes for guessing what happens to an unlubricated bearing. Better off removing to compressor altogether and fitting the different belt, bet they're cheap as chips as well.

The problem is.... the crank has two pulleys on it, the back one runs the aircon and the front one runs the alternator/psteering.
If i remove the aircon pump then the other pulley that turns with the aircon belt would not be connected as it sits further back than the psteering/alternator pulleys, do you know what that other pulley is?? (the one that turns with the aircon, just right of the crank)

Most cars hold about 500-600grams of refrigerant. All cars after 1990 run on 134a refrigerant you need a reclaim machine to do it right if you are tacking the system out seal all ends of pipes and the compressor to stop moisture getting in. Also beware there is oil in the compressor!!
