Mapper is the most important consideration.

Personally, I found the open road is the better option.
Rollers are good to get it up and running correctly - but on the road you can perfect the final tweeks to any glitches which don't seem aparrent whilst on the dyno.
Overall though, both are just as good....it's more down to the person doing the work rather than the equipment.

By reputation he seems to be up there with Andy F (based in Scotland).
I can however vouch for Powerstation, they mapped my bugeye WRX and I'm more than happy with the results. Powerstation have a superb setup and have excellent geometry and dyno facilities. As previously said, they do all the post-import mapping, servicing and warranty work for Litchfield Imports.
I'll be getting all my future work done there (had my service done last Monday), except perhaps a full engine rebuild which I'd consider API Engines for........
Anyway, back to your question. Bob Rawle is a non-dyno mapper based near Swindon and charges ~£650 +VAT (IIRC). Powerstation dyno map and are ~£600 +VAT.
The choice is yours.
the main reason for tuning on a dyno is to be able to load it at a certain rpm and tune the various maps in realtime. you cannot do this with the subaru ECU...therefore that benefit is gone.
that aside it is the ease of being able to do multiple full throttle runs without having to dodge traffic that most tuners user them. i map my own car on the road and believe it ultimatley gives you a better map in terms of response and driveability.

Having had several cars running different mappable ecu's. I can 100% assure everyone that on the road mapping is better!
My current car was mapped on the rollers, by wallace performance in Aberdeen, its ok map wise, but could be better.
