Default Indian food

As many might remember, I'm a big lover of Indian.

So yesterday I was invited to my local restaurant for a demonstration

I went to the kitchen and the chef cooked my favourite meal - Lamb Madras
And cooked a Chicken Tikka Bombay for my other half

He explained the whole process to me via one of his colleagues as his English wasn't great

I found the whole process fascinating and just confirmed to me that you can't really make a truely authentic curry at home because you won't have either the time or half the ingredients
The amount of spices he used was unreal and everything was done by judgement
He literally had a pan and a big spoon and that was it
Hardly any salt added either I might add

And it was lovely I might add.

I do cook my own curries from scratch, admittedly I do have to take a day off work and spend it in the kitchen so I always make loads and freeze some. I mix the spices, including some freshly ground in the pestle and mortar, and even with all of that effort it still isn't a patch on the local curry house - don't care because it's fun and everyone who has had my curries enjoys them

You are a lucky chap Urban. I would have enjoyed watching that. Mind you, you would expect the chef to know his stuff,

The kitchens in our local take-away are open to viewing, I always turn up to collect our order earlier than I need to, just so I can watch the chef's in action

When I lived in Thailand I used to go to a restaurant where you could dine at a bar area directly across from the ranges and watch the chefs at work

I became such a regular there, that they all knew me, and would cook their own recommendations for me, bypassing the menu selection stage completely, one develops an asbestos @rse rather quickly that way

Whilst in India I was going to go on a two day trip, that taught you how to cook a decent curry, obviously it wouldn't be as good as those with years of experience, quite sad I never got around to doing that now.
