Default pumpkin soup

Seems as it's Halloween, every year i throw the remains of the pumpkin out. I thought this year i would have a go at making some pumpkin soup, never tasted it before so thought i'd give it a try. Anyone got any quick and easy recipes for this?

Gonna try adding some ground corriander, garlic, fresh chilli, onion and blackpepper.
Its costing me nothing as i already have left over ingredients from the curry i'm making so i thought i'd give it a go, so it doesn't realy matter wether it tastes nice or not

My mum loves the stuff - i think it's vile!!

Something along the following:

Pumpkin
1 onion
Chicken Stock
1 large potato
1 clove of garlic
3 tbsp of butter
Cream
salt & pepper to taste


Fry onion off in the butter. Chop the pumpkin flesh & peel & chop potato. Add pumpkin, crushed garlic, onion & potato to 1/2 pint of chicken stock.
Cook until vegetables are tender.

Blend until smooth - add cream until it reaches your desired consistancy. Salt & pepper to taste

Make a ton of this every year , stick it in freezer and use it over winter months.

Chop a 3lb pumpkin into 8, removing all seeds
Brush with walnut oil, season with salt & pepper
Roast in oven for 20-25 mins on 240C, remove from oven and leave to cool
Chop a large onion, fry gently for 5-10 mins in olive oil
Add 1litre Chicken stock and 500mls whole milk
Bring slowly upto simmer point
When pumpkin has cooled, scoop out the flesh into stock
bring upto simmering point
Add salt & pepper
Blend into smooth soup in liquidiser
Add grated Gruyer (Sp) cheese
Serve with fresh crusty bread
