Default Cooking for a veggie?

Got some friends around on Sat night for supper. Ones a veggie. Any ideas on what to cook for her. Dont mind making a real effort but would like to do something to serve along side a meat dish as her husband is a real carnivore and doesnt get to eat meat very often. So, any ideas, recipes from you veggies out there would be appreciated.

Steak tartar, well done .


Spicy rice/cus-cus in half roasted peppers is quite tasty. Top with grilled cheshire chese.

MMMmmmm, I like the sound of both of those.

Rice, onion, some mixed vegetables, cous cous. What about stuffing them rather than halving them??

....edited to say ADD SPINACH....god do I love spinach.

Do the full carnivore meal for everyone and just substitute the meat with a whacking great mushroom, with chilli, garlic and butter for the veggie person

Personally, if the 'veggie' coming round refuses cheese, I wouldnt let them over the threshhold.

Halved is good, the rice on top crisps up nicely in the oven

You can't give veggies seafood!

I can understand where veggies come from when it comes to meat, who wants to eat something thats been electrocuted across the temples prior to an inverted throat slit.

Being dropped live into boiling water is a much more painless death

I know a really simple one that is also great for the normal meta / fish eaters also.

Buy one / two camenbert dependant on how many guests (I think thats the right one, it's a soft cheese that comes in a little round wooden box).

Take the lid off and open up the protective wrapper - usually paper, make several deep cuts in the cheese. Now peel and slice long ways some garlic cloves and insert the garlic into the slits and pour over either some port or decent quality white wine.

Now loosely wrap back up and pop in the oven for about 20 minutes.

The above is superb served with lots of fresh boiled / steamed vegetables and or fish. You simply just dunk your veg in the cheese and away you go.

It tastes superb and makes for a really quick simple meal as it's just lots of fresh veg and about 3-5 minutes to prepare the cheese.

Have done a veggie one cheese just for them with loads of veg and they loved it!!

Give it a try, if not for the vegghie as a share type dip that people can get stuck in to.

Speaking as a veggie wierdo that would definitely get my vote, I could take or leave the chilli bit though

The worst thing you could serve would be one of those awful packet veggie burger, breadcrumb coated things, they're disgusting. Obviously I know you and Mrs Chip are far more discerning than that

FWIW I eat animal rennet cheese, I don't have strict rules, I just don't eat meat or fish because I don't like it

Mushroom Stroganoff, usually served with rice but fine with lightly cooked vegetables and preferably a salad too.

Forgot to say, use a mixture of mushroom varieties.

Thanks all for the advice.

Think I'm going to go for a starter of Caramelised onion soup followed by a mushroom stroganoff for which I'll pick the mushrooms myself off the hill at the back of the house as they taste far far better than anything you can get in a supermarket and this time of year are usually plentiful

I wonder if she'd notice if I used a little fresh chicken stock in it rather than a veggie OXO cube thingy

roasted pumpkin risotto
mexican bean chilli and coriander cous couse

To be honest mate mushroom strog is prob what she gets stuck with everytime she goes out to eat it's a resturant fave for a vegi.

Butternut squash risotto, even as a harden meat eater it is superb. Will post the recipe if you want it.
