Fried Rice Recipes?

Been trying DIY chicken fried rice in the kitchen tonight for the first time. End result wasn’t bad, but it needed something extra. We tried:
2 Chicken breasts (cut up)
1 Onion
Handfull of peas
Light Soy Sauce
2 Eggs
Salt & Pepper
Rice (of course)
Maybe marinade the chicken first? I think the meat was the probably the weak point. Adding more Soy Sauce helped but it could end up too salty.
Anyone got any tried and tested recipes or suggestions?

My way...
Boil rice for 5-6 minutes. in salted water with a splash of Olive oil.
Taste it so it is still 'nutty' in the middle but basically cooked and not 'fluffy at all.
Take away and rinse in loads of cold water... stop it cooking.
Drain thoroughly.
Get a frying pan with some Olive oil or walnut oil in the bottom.
Take 2-3 eggs and fry them with the yellow mingling with the white.. so you get some nice patterns.
Smash them up in the pan... bits.
With the Egg spread evenly on the frying pan base spread the rice all over it.
Put a lid on it and with the gas on full heat leave for 60secs.
Get yourself a little fan switch it on and lift the lid on the pan.
Start turning the rice over with a WOODEN spatula.
Blow the moisture off, then add some salt to glaze the rice.
4-7 minutes of this will leave you with the best rice you have ever eaten...

It is the only way to do it... we never buy rice from our chinese... I do the rice and they deliver the rest... when I'm feeling lazy.
I do the meanest Sweet Lemon Chillie-chicken ever... you start eating and you think... oooohh sweet, then it tears your eyes out thru your throat so you have to have some more sweet stuff to soften the blow... and then you are hooked... i have 'cooked' many women into bed... if you can cook something they have never eaten before and it tastes like heaven you have waltzed 3/4s' of the way to bed and the ultimate accolade to a chef is a good ****!!!

My fav fried rice recipe...yum
Couple tips for making Killaz fried rice.
1) Always use boiled rice which was put in the fridge overnight to have dryer texture.
2) Chopped green onion/mini onion/yellow onion will work magic on your fried rice
3) Always preheat (high heat) the wok/pan for at least 3-5 mins to have best result.
4) Be patient and keep stiring the rice to separate the grains of rice.
Cool Dude's bling bling pimping fried rice:
Ingredient:
- Boiled Rice (duh’), 4-6 cups
- Shrimp, 6-10, diced and washed, then put small amount of salt, pepper
- Ham, 2-3oz., sliced
- Chinese BBQ pork, 3-4oz, diced
- Egg, 4-5, well beaten
- Green onion/mini onion/yellow onion, chopped, 2 tablespoon
NOTE: All portions are subject to your own taste.
Procedure:
1) Take the Rice out from the fridge, use a fork/a pair of chopsticks to dig thru and separate the grains of rice.
2) Preheat the wok/pan for 2-3 min, add oil AFTER preheat
3) Put shrimp, ham, and BBQ pork into the wok/pan and stir fry for 1-2 min.
4) Remove the ingredients from the wok.
5) Heat up the wok for 3-5 mins, add more oil
6) Put the green onion/mini onion/yellow onion into the wok, stir fry for 30 sec to get the aroma “out”
7) Put rice into the wok, keep stirring and don’t let any stick to the bottom of the wok. Until you can separate each grain of rice, keep stirring. Add egg and stir some more, make sure the egg is evenly spreaded...
8) Add the ingredients back to the wok, stir some more.
9) Add salt/pepper for taste.
10) Enjoy, and prepare to yell, “HELL YEEAH, this dude's bling bling pimping fried rice is DA BOMB” and let everyone know how good that is.
If it doesn't taste good, that means YOU SUCK and it's not my recipe's fault

The key to decent egg in your fried rice is, as most have suggested, cooking the egg seperately. I normally whisk 2-3 eggs, add salt and pepper then cook in olive oil until cooked through. Then slice into small chunks.
Cook some bacon/ham with some chopped onions and add some garlic. Add all this to pre cooked rice in the wok and coat with dark soy sauce until light brown. Some like to add peas but I prefer without. Another ingredient is thinly chopped lettuce added at the very last second to avoid going soggy.

Oyster sauce is just as tasty as Soy but nowhere near as salty.Also, black bean sauce is good too.
