animals do seem to have a nack for knowing whats gonna happen, our rabbit swaps his coat summer to winter and back and seems to always be about right

Yes, but it takes days and is temperature dependent.
He could get it wrong.......if the weather drops cold again, his winter one will grow out again.
This leads me to remember my Grandpa saying, "T'rooks are building high...it'll be a good summer..."
And my dad exploding, "How the BLOODY HELL do the rooks know what the summer is going to be like fatha.........."
