By Egt you mean exhaust gas temp yes? Exhaust gas temp is effected by fuel air mixer, the leaner the mix fuel to air the hotter the exhast gases get.
As a pilot, we have them on piston engine aircraft so you can adjust the mixer as you climb higher. because the deseity of air become less the higher you go. On a car it would be a useful way monitoring engine performace and would give warning of trouble ahead.
