Oil pressure or Oil temp gauge

oil temp is good because you really ought not to be on high boost til the oils up to about 80degs.C
coolant temp is a woefull comparison as it heats up MUCH quicker.
oil pressure will highlight if you have imminent problems, my mate Mike had big end failure and was warned of this with a sharp sudden increase in oil pressure.
maybe a good idea would be a dual gauge that shows both (ie SPA)

Although I like to see the oil temp for warming up purposes a pressure gauge does give you a good indication of engine condition/possible probs.
You can get an idea of what the oil temp is from the pressure as when the oil is cold (ie thicker) the pressure will be higher, not dropping much at lower/tickover rpm.
When the oil is really hot you can see a drop in pressure, especially at tickover..!
Hence, don't give it some until the pressure gauge needle moves freely

Oil temp is more usefull day to day to see that things have warmed through to be able to "press on"
Oil pressure is more use for the long term monitoring and the "oh ****" moments when you realise there's something wrong Depending on whose gauge you fit you can set the pressure warning level yourself which can give you more warning / time to do something about it if it drops dangerously low, i.e. I've got my Defi one set at approx. 35 psi and it'll tell me if I'm about to stall the engine with a dodgy gearchange (tickover pressure approx 40psi and 80 psi whilst driving (both when oil is warm). The standard Subaru sender is set to put the dash light on at something like 5 or 10 psi which basically means that if the engine is running like that its fecked...
