You can get whats know as a Forrester pocket from your dealer or from Roger Clark Motorsport for about £20, or Halfords sell suitable simple single din stowages for about £10.
I used an Autoleads loom which plugs straight into the cars wiring and into the new stereo, they're £10 - £15 depending where you buy them from.
You remove the metal mounting brackets from the original stereo and re-use them with your new stereo and whichever single din pocket you buy.

Roger Clark Motorsport - RCM Product Detail
This is the Forrester pocket (I used this), you need to drill a couple of holes in the side to match up with the original stereo brackets but it's a simple job and looks great when fitted.
Car Audio Direct - Subaru wiring adaptor - Fitting Adaptor
Wiring adaptor - Halfords also do these but I think they're £15 at Halfords.
Car Audio Direct - Volvo facia adaptor - Fitting Adaptor
Plain single DIN adaptor - Halfords also do these, no cover unlike the Forrester one but will do the same job.
Hope this helps

How to single din newage
Did this a few months ago hope it helps:
Firstly pry off the silver surround gently with a wide thin flat blade screwdriver. Remove the existing stereo and cage (six bolts) then remove the two piece cage, the multi connection and antennae lead. There is also an earth strap on the rhs cage which I didn't undo for fear of breaking it - I did give it a good few yanks first before chickening out! Now for the pics of the install:
I used a single din pocket from halfords (£10 ish) I did try with the stereo at the bottom but it was too tight.
Front plate fitted to pocket gets rid of any gaps.
original cage fitted directly to chassis of stereo using self tapping screws watch the clearance though - it should tell you on the chassis the maximum length of screw, machine bolts do not have the correct thread.
Adaptor lead fitted again about £10 from halfords - if you order the part from them its cheaper than if its off the shelf, ebay is probably cheaper still.
Here it is fitted back into the console
Finally with the surround fitted.
Its not too difficult to do the only fiddly parts are sussing out which brackets to use on the pocket as it doesn't tell you in the instructions , and don't drop any screw/bolts as you fit or remove the thing as they vanish into the centre console
