don't quite know how to describe this but...
...when i have the throttle fully open (this has happened in 3rd and 4th), there is a loud bang and all the whole car jerks violently once and then returns to normal. i thought at first it was me not paying attention and hitting the rev limiter but now i'm not so sure...this is intermittent so unfortunately i can't explain it any better because its only done it about 3 times. i wonder whether it could be from the transmission?
oh, its a MY00 wagon running i'd guess between 280\300bhp (last mod being Harvey's excellent headers), any one got any ideas?

I would say it definately sounds as though you're hitting fuel cut due to running too much boost. Once a certain boost level is reached, the ecu will cut fuel for a fraction of a second by way of self preservation, then things will go back to normal.
The reason this is happening is due to the free-flowing nature of the exhaust parts you've fitted - they give what's known as a passive boost increase, which will be causing you to hit your limit.
You can get round this either by getting the ecu remapped (advantages: more power, will get the best out of your mods, better economy when cruising. Disadvantages: costly), or by fitting some form of boost controller (apexi avcr is good, or Dawes device is a cheaper/more basic alternative but will require a boost gauge to set it up) and setting the boost at a level which is lower than the fuel cut.
You may find it happens more in higher gears (3,4,5) as there is more time for the car to build boost in these gears.
Hope this helps,
Brian.
