Default Changing transmission fluids - what do I need?

It's time for me to change the fluids in my transmission....so I've a couple of questions...

What is required to change all fluids, i.e. is it just the gearbox and rear differential that need their fluids changing or have I forgotten something?

What oil and grades do you recommend for each? Are there any items you can recommend to make the job any easier?

Car in question is a 1997 Version 3 STI RA V-Limited (non dccd).
