Our IT department is all PC, and apart from the iOS and UX teams, the majority of the office is PC based. I know a couple of the chaps have macs and use rEFIt to dual or triple boot their macbooks (OS X, Windows Vista and Ubuntu) and they don't seem to have a problem.
You could check out the macwindows website and see what known issues there are, but you should be pretty good. The intel macs are basically just PC's in fancy clothes, so they should be able to run windows as well as a normal windows only laptop.
Bootcamp 3.1. contains drivers for Windows 7 so that should have everything you need to get it working properly.
Do make sure you leave an OS X partition on the disk to allow for software/firmware updates, as Apple will only provide them as mac apps and not exe files.

as said, you shoul have an osx partition around in case firmware needs updating. Apple will not provide firmware updates for any OS other than their own
I do know a few people who just have xp on their MacBooks and they have not had issues, but I personally would not advise it

I have an MBP running both Bootcamp and Parallels.
Almost all the software that I require for work is Windows based and I was concerned prior to purchasing the MBP that I may have issues.
I have found no problems whatsoever with any software or integration and I have only run parallels so far.
I have had no requirement at all to run Bootcamp

I do on my work Mac. I dual boot but don't use Bootcamp as I run Windows 7 x64 on a 20" iMac and it's not officially supported so I installed the drivers manually. Currently I'm about 75/25 toward Windows 7 which runs tidy on it.
