XBOX Mods
I have read about putting a bigger hard drive in so you can save your games to use later without the need for the disc when playing. Is this easy to do? Do you need to solder? What sort of cost is involved?
(please dont point me to any xbox forums etc as it's all noise to me)

Chip typically £30ish from www.baldbouncer.co.uk
I soldered - was very easy.
Plus cost of disk.
With the auto-installers avialable these days its all very easy. Take care if Live! is important to you. Should be ok with a chip that can be disabled - some reports/rumours of peopl being banned even with the chip disabled.
No substitute for reading the tutorials though - www.xbox-scene.com. The whole process cant be accurately described in a few lines on S'net.

This is what can happen with the non-solder chips
There are also totally non-intrusive ways of flashing the bios aswell (i.e. no chip at all) using various game hacks but I havent done it so cant offer too much advice.
If you've ever soldered anything at all before - then there is no reason not to go the solder route imho.

You could always use the new Xapter which only needs one wire to be soldered, which is the main cause of problems with solderless chips, the D0 ground wire.
Can you just back up your games onto the hard drive with this?

Then you will need to flash the bios on the chip as they come flashed with legal Cromwell bios, this is pretty easy.
After that you'd be best getting a new HDD as the standard one will be only 8/10Gb, not really enough for games. I have a 250Gb in mine which is plenty for games, movies etc.
Upgrading the HDD is just like changing a PC HDD, then you can change dashboard (the operating system) simply using something like the Slayer Auto Installer CD. Once this is done you can start various applications like media players and the like from the menus as well as back up your games to the HDD and start them from a menu too.
