any recommendations for a free, easy to install stats package for a Linux box running Apache with virtual hosts?

There are loads, visit Google. Analog is quite well used, most of the time it comes down to whether you like the look of them or not as there's only so much info you can glean from logfiles.

If you're using VirtualHosts with seperate logfiles you may run into trouble running the analyser on every logfile so you might want to log to one main file and parse that. You'll have to modify your LogFormat directive to include the virtualhost that was accessed. Docs at httpd.apache.org.

Webalizer is quite a popular one. We use it here. It's fairly easy to set up. It produces a summary web page of the stats with areas that can be clicked on to provide more detail.
