Will a rota alloy with a offset of 48 and 18 x 8.5j fit without any issues and clear my brembos?

There is a lot of information in here that isn't necessarily correct.

The factor that determines whether a wheel will clear the brakes is not only the et, the shape of the spoke is at least as important.

18x8 et32 is a fairly aggressive offset but will not necessarily catch. It depends on tyre size and how low you are.

18x8 et45 will easily clear the arches and 'should' clear the brakes but depends on wheel design/shape.

I agree with Fat-thomas about staying away from replica wheels such as XXR's, but a good quality wheel in the correct size and offset (for your requirements) will make driving feel much more planted and look better

I currently have 18x9 et35 WedsSports and they are the perfect size for looks and if I can get a wider tyre to work on them, they should be much better on track as well

They're a set of genuine team dynamics pro race 1.2's and same width as my oem widetrack alloys

Quite low on coilovers with just arches rolled. The rear arches look pulled in the bottom picture for some reason, I can assure you they aren't though

That looks spot on! How do you find getting over bumps?

The tyre is a bit fat so it may rub a little bit, but the offset is good so you might get away with it. very borderline

It won't be lowered at this stage so hopefully it doesn't rub too much

It will look pants if it's not lowered. I'm not talking about dropped on the floor, but nice wheels on a standard ride height car just look odd imo. Each to their own though, it's your car!

I agree with BPR, bigger wheels on standard suspension will make it look like it's on stilts.

Why not just use a 225/40/18 like everybody else? You'd be able to lower it a bit then as well which would make it look a bit more as if it came from the factory like that

Is it from a shop or private sale?

If it's from a shop you should be able to get them with a more suitable size tyre. If not, tell them to guarantee that tyre will fit without any issues or you want your money back. If they really want a sale they should sort you out either way
