Simon,
Why don't you try a 'Run what you brung' at Santa Pod. There was one last Sunday, which was rather a good a laugh...granted you won't get to 140mph, (unless you have some Serious Tweeks) but it gives you a chance to give the Scooby some welly in relative comfort and no fear of the rozzers on your tail!

Not sure how you would go about sorting out some time there, but Bruntingthorpe would due you fine. Don Palmer took us down there when our Wetter the Better was frozen off, I could reach 140mph along the back straight, and 135 from a rolling start on the main straight. (std MY00, down on std power )
I would assume you should be able to get pretty close to the top speed if you carried on as you should be able to carry around 70mph onto the main straight (but I never tried), then have almost 2 miles to play with, before you reach the first corner.
Warning - not recommended on std 4 pot brakes though
