To those having turkey this xmas
What do you do with the giblets
I throw them to the bin, but heard some eat them

make stuffing with them, put them in a food blender, add onion, bread, sage, bacon and blend, season to your taste and bake in the oven till cooked.
Really nice.

The neck was my favourite as a kid ...... the dog got it in later years - now the dog gets the lobster remains! She's posh .....

That's cruel - feeding seafood remains to cats or dogs. It will lacarate their throats and cause them to drown in their own blood
Should be hanging own head in shame...

I presume that only applies if the dogs eat the shells. I can't see the flesh being an issue.

You boil them gently for an hour to make some stock. Then when you've finished roasting the turkey, you add this stock to the roasting pan after removing most of the fat that's come out of the turkey, while it was roasting. You stir the stock and the little bit of fat/oil that you have left in the pan. Then you add a little cornflour to thicken it and season it with salt and pepper. Hey presto delicious gravy to pour over the turkey and trimmings.

+1. Just finished making the stock from the giblets (1 1/2 hours simmering away has produced a fine stock to be added to the gravy!!)
