Talking this is a tricky one...

why does bread go hard but biscuits go soft if you leave them out?

It's all to do with the molecular structure of the component parts of each.......


To be honest I have no idea BUT have you noticed that in years gone by if you left bread it went hard and you could make breadcrumbs, but now it goes mouldy first......

Relative moisture content of the object in proportion to the ambient air around the object in question. Well you did ask.

Fresh bread is moist so gives up moisture & becomes hard.

Biscuit is dry so takes in moisture & becomes soft.

If you leave the biscuit long enough it will turn dry though.

It is one of the definitions of cake and biscuits. There used to be different tax treatment of cakes and biscuits and there was a court case to prove that Jaffa Cakes were biscuits.

The accepted definition is that cakes go hard when left, biscuits go soft.

I am not sure about Millie's cookies as they are soft and stay soft

Bread dries out while biscuits tend to absorb it from the air.

Biscuits don't go soft, well, not when I'm around. They get eaten too quickly, although as I'm an avid dunker, then technically they do I suppose. My head hurts, I need a biscuit.......

Try putting your biscuits in the cake tin instead.

Or just bung everything in the bread bin.
