Question Any Good Recipes for Mussels

I want to cook mussels at the weekend but wondered if anyone had any good recipes for a sauce - ideally one that is good for dipping crusty bread in!

hmmm when I last cooked Mussels I used a Bottle of Red Wine and some chopped Garlic in a Saucepan and let them simmer for half hour or so

It is very nice and the flavour is yummy

Has to be white wine and garlic. Keep it simple.

Done properly this is the nuts with a nice ciabata

Garlic butter with parmesan melted on top.Bung 'em under the grill for a minute or so and voila'!

As for dipping,you can't beat just plain old virgin olive oil with a touch of roasted garlic or fresh chilli.

Half an hour? They'd be like rubber bullets, you only need to cook them for a couple of minutes!

Marinier sauce is the classic, but you can add some cream if you want to be extravagent.

I see Rick has added the cream

Moules à la provençale:

- Finely chopped 3 cloves of garlic, 1 stick of celery & 1/2 onion.
- Sweat the veg in a large saucepan for 2 mins with a little olive oil.
- Add 1 glass of dry white wine.
- Simmer for 2 mins.
- Add 1 tin of chopped tomatoes
- Simmer for 2 mins.
- Add 1/2 kilo of live mussels.
- Put lid on saucepan and leave for about 4 minutes.
- Serve immediately with bread.
