Default Any Sn gardeners on here?

Couple of green fingered questions..

Grape vine:

I have a grape vine thats running amok... I had a leaflet with it about nipping out, and cutting back, but it didn't make any sense, now i have large shoots going everywhere , how can i get it back to what it should be? (and get some good grapes into the bargain?

Banana plant:

I have a red banana tree growing in the garden, whilst it has substantial leaf activity and bulk, it has sod all in height, any ideas how these things are encouraged to go skyward instead of outward?

If the vine is against a fence or a wall then it's easy peasy. Just fix some wires at about 3 levels horizontally and tie in growth along wire/s. It is very compliant and will take to training like a Cruft's winner . I planted one 3 years ago against a wall and it is now about 18 metres across. Never cut it back. Masses of white sweet grapes but not ready until late September. If you just have a bush stuck in the middle of a bed I have no idea

Its against the side of the garage, i have one branch running left, and the other right, with a third going up and right. i have other branches going off at tangents. do i remove these, or train them as well?

Train the shoots now and then after the last frost next spring, cut them back to about 5 dormant buds from the main branch stems, unless you really want it to spread. The fruits and flowers always form on the new growth, not the old wood, thats why if you drive through france in the winter all you see is thick woody stems on the cordons.
I am afraid though the banana is out of my expertise, but remeber that some bananas are shrubby in nature and not trees.
