Default Cooking Trout

One of the local lads gave me a few fresh trout today, so i cooked one wrapped in clingfoil with mixed herbs & butter & fired it in the oven for 35 minutes. It was

Does anyone else have any ideas on how to cook it & what ways.

I do the ones I catch in a similar way.
Wrapped in foil and stuffed with onions, garlic and herbs. I also slit the skin and put in slivers of garlic and almonds.

Grill it, with a splash of lemon and some salt and pepper on it, having slit the skin as Nick says to let the flavour infuse! mmmmm!

Generic fish recipie....

get 2 whole fish, place in large ovenware dish..lasagne type..

white wine.
fish stock.
garlic
fresh herbs...corriander & chives for instance..
Veg..baby carrots, sugar snaps for instance..more than you would serve with the fish.
S&P.

top up with water just to cover the fish.

Hot oven (200), 25-30 mins.

Take out put fish on grill pan.

extract the veg you need to serve with the main meal.

draw off some of the juice to make a sauce...add some cream & simmer to thicken.

Liquidise the rest, add some cream to make a soup for starter.

get fish, and blast close to the grill to crisp the skin.

Serve with boiled spuds & sauce.

Or you could just simmer them gently with the odd PM over a period of a month or so. Tasty
