How do the Supermarkets keep them nice and yellow, under all that lighting, unhung,then I buy some and after a day or so they are black and soggy?

supermarkets do not have cold air blowing over them!!!! you do not want to keep them cool either!! they are yellow in supermarkets because they get a new delivery everyday and they are sprayed with thyobendersol (spelling is prob cr+p) to keep them from ripening.

are they not also stored at a low temp in the back of supermarkets to slow the ripening process down plus have you ever looked at the lighting systems they us, strangly enough alot of supermarkets has different lights over the fruit than elsewhere making them look a better colour. {a bit **** I know but noticed it in ASDA once}

the lights are just spotlights to make the fruit and veg brighter!
When they are stored in the back up area they are meant to be covered with a 'banana blanket' to keep them at a decent temp and out of draughts and cold etc

I 've picked up bananas loads of times in the wagon and the fridge is usually set at around 1 -2 degress centigrade. Refrigeration does slow the ripening process down,but the bananas give off ethylene (iirc) which does turn the skins darker,although the actual banana is fine.They are usually sprayed to stop this happening as the public demand nice yellow skins . So both you guys are right.
