I do Jeet Kune Do.
It's not something I would do straight away but it's a goal I'm working towards.
I guess I'll be doing it was part of an organisation but I'll need my own gym, loads of focus mitts, mats and gloves

First and foremost you'll need qualifications , also affiliation to an organisation (preferably), financial backing is always handy, a regular venue, advertising, public indemnity/liability insurance, police disclosure clearance, not to mention the ability to convey teaching in an informative and fun manner
If you want specific advice pm me, I've taught TKD for 18 years

Not after any specifics right now just some info
Affiliation to an organisation to not a problem as I have full backing and support from my Sifu.
I'll have to work on my finance
Regular venue. Well thats gonna be a problem as I want to be based in China Town
public indemnity/liability insurance - My Sifu is gonna cover me
police disclosure clearance - What's that?
What's the best way to get students to start with? Word of mouth or advertising?

It isn't crucial to have a consistent venue however it is widely recognised that some consistency in this area does reap rewards.
Public indemnity may be available through your National Association/Governing Body. Approx £40-£50 per year covers you for approx £2m IIRC
Police disclosure is carried out on our behalf by the British Taekwon-Do Council and you need to attend a course and have police checks carried out before you are "disclosure checked".
Without your disclosure you will not be premitted to teach by any respected organisation, especially to children. If you have any PC's for violence or drug dealing you will not get authorised.
As for getting new students, the best method by far is word of mouth to get you off the line. Get a few mates or work colleagues along and once you have a few of them hooked, advertise to the masses. You don't wanna advertise first then you may only get one or two complete strangers turning up and not another soul in your class. Much better to establish a base of reliable, "hooked" students and work from there.
Good luck
