Download the FLAC codec from http://flac.sourceforge.net/download.html
Run the FLAC Frontend program and Decode the FLAC files to .wav files
Then use something like CDex to convert to mp3

There is a little program called dbPoweramp which is a wonderful tool and which will convert almost any audio format to any other format with little in the way of trouble, in fact you can just right click on it and select convert from the menu. I think, though I might be wrong, that the mp3 licence with the free download is only a limited time trial but it might be enough to do your job.
If you use audio files at all then you should have this program on your machine as it makes life a breeze. It will also cope with braodcast WAV files and even files in the format used by the Dalet system.

Spooky! I needed to convert FLAC files into AAC on my Mac, and alas iTunes won't do that
Had a quick search and found this rather excellent post in a forum. It led me to the application http://sbooth.org/Max/ (Tiger only) which can very simply (see the link to the forum post) setup to convert from FLAC (or quite possibly anything you throw at it) into AAC. Perfect!
The other option mentioned was to use Roxio Toast 7.0.1 or later, as it's "Audio" section has the ability to export files from one format to another.

Great stuff, thanks guys! I'll give all of those links a tour and post back here as to what I end up doing. I already downloaded dbPoweAmp but the trial version doesn't include exporting to mp3 as they say they have to pay royalities to Thomson (Thompson?) so it's a $15 purchase. I don't plan on ripping many FLAC files to mp3, just a couple so $15 is more than the price of the CDs...

Gary, your link put me on to something, a plug-in which allows Nero to read FLAC files and burn them onto a CD, then rip back off the CD to mp3. Cheers!

I like to have a copy on my iPod and use the CD for playing in the car (no iPod connection and I have to buy a new iTrip if I want to play the 'pod through the head unit).
