For a bus ride of about 1 hour you can go to Segovia - which is the most amazing little villagey place to walk around, great restaurants and things to see. If you want out of the hussle and bussle of Madrid for a day it's a lovely place.

btw the Sunday Market is call "El Rastro"
Plaza Mayor is a nice old square to walk around and you get lots of street entertainers. Plaza Santa Ana (just off Sol near the Teatro Espanol) is lovely too - with nice bars round the edge to while away some time. Tapas is good here too.
Shopping - Main area is around Sol. Head to Gran Via for the Zara outlet store. Apparently lots of bargains there (for the Mrs). Also, Calle Fuencarrell is good for more quirkey fashion.

Sergovia is a must. She will like that. It has a massive romaon aquaduct and the castle that the disney one was modelled on!!
Much of the architecture is on the main road the splits Madird in two, Castella or something. The leaning skyscrapers are worth a look. They are a mile or so north of the bernebu stadium. They do open top but tours, 3 routes I think. The pricey shopping place runs parallel, just of to the east of the castella. At the bottom, there is a nice park with lake in the middle.
As far as food, try Botin (supposed to be the oldest in the world - need to book), its off plaza major. With your back to the statue, take the far right exit in front of you, down some steps and its on the left. If you cant find it, try la vaca argentina in glioretta de hoyes, is a great argentian steak place. Also, La finca de suiziana just west of Pt de soll is OK.
Have a look at Atocha rail station, its got a botanical garden in it, with a bar upstairs.
If you are feeling really brave, get off the metro (get a book of 10 tickests for 10 euro, and head towards gran via station by mcdonalds, street walker central!!
Apologies for the spellng!!!
