You have to do the searching and fall lucky.
Last year I got a return Sheffield> Southampton Parkway at an £80 saving, first class upgrade included, by booking two singles via the Virgin website, not a return.

Have a look at www.thetrainline.com

Once you've selected your destination and date/time of travel it then lists the various ticket options/prices for the journey. If you're looking some days ahead significant savings over the "normal" fares can be achieved.
