Decide whether to do Disney or Universal. We filled a fortnight of Universal (including a couple of days left over from a previous Disney pass. You can't do both justice in just a week.
Try and plan what you want to do so you don't waste time thinking or doing too much driving.
Wet 'n' Wild is better taken in small chunks every day or other day IMHO rather than a whole day just once. They charge for lockers/tubes though so it isn't really free. Also the car park is cheaper than Universal and the ticket is transferrable so you don't have to pay again for parking at Universal/Sea World. (Parking charges mount up adding to the cost of your flexticket).
Mall = evening, not necessary to spend a whole day.
When you go to Busch (I would recommend twice to cover everything) go on to Clearwater Beach which is great.
PS If you go to Seaworld then you often get a second day free without having to use a day off your flexticket
I would say Universal is more adult, Disney more for kids.

Also suggest you buy the "unofficial Guide to Disney". Has some great tips to beat the crowds.
I also used to arrive prior to gates opening (with pre booked tickets) and head for the most popular rides first, then you can relax and go on the remainder.

Go to Hooters for lunch
Use valet parking at Universal - not much more than the car park and you'll appreciate it at the end of a long day.
Islands of Adventure (Hulk and Duelling Dragons coasters, Spiderman, Dr Doom's Fearfall) has more thrill rides than Universal Studios, but The Mummy is a must ride
Drink your way around the World at Epcot
Aerosmith Rock 'n' Roller Coaster and Tower of Terror at MGM.
Play golf at Orange County National
Stay at Grande Lakes
Have dinner at Charley's Steak House
Visit Winter Garden and take the scenic boat tour, proving that Orlando has more to offer than just Disney

Jimmy,
Things to do will really depend on whether you are taking children with you.
You will not be able to cover more than 20% of the attractions in Orlando in a week and it is incredibly tiring. You will need to rest.
Seaworld is a must. Shamu and 'Clyde and Seamore (get there early) are a must see.
Busch Gardens in Tampa is probably the most complete of all the theme parks with something for everyone from wildlife to wild rides. Worth the hours drive.
Both Universal Studios and Islands of Adventure are excellent. The latter being for the older children and adults.
If you are taking kids, I think one of the Disney parks should be visited (just for the magic). Young children will love the Magic Kingdom or Animal Kingdom. Adults may enjoy Epcot or MGM Studios.
Currently high 70's in Orlando.
Have fun. I am sure you will want to return.
Martin (4 times visitor, hopefully to become resident)
