The Podrace from Episode One or the battle at the beginning of Gladiator are pretty good (with the sub cranked up of course). LOTR would be pretty good too

1.
If it's DTS then no question Lord of the Rings 4 disc edition. (either of them). If not DTS the 2 disc edition will do.
2.
Terminator 1 - I saw stuff I'd never seen before and I've seen the film as much as most 30yr old blokes. (a lot). How many shades of black! H
3.
Star Wars - All of them
Hope you've got a decent RGB scart.

..or component video with BNC connectors.
with a 20ft projector..
I love my mates house
I make do with a 32" dolby digital TV and component video
Abyss is good too with the rig 'shake'
contact and ****** are also great for audio.. (DTS or otherwise)
altho contact is showing its age picture quality wise..
oh, and Con Air great transfer, great sound ...

component video: Video signal in which the luminance and sync information are recorded separately from the color information. Superior to composite video.
composite video: Video signal that combines both luminance and chrominance in a single signal. Inferior to component video.

Bullitt is in stereo, not 5.1, and although it is wide screen the picture isn't that great. Fantastic chase though.
The bit in the Matrix where they rescue Morpheus (from the arrival in the foyer up to the chopper crashing into the side of the building) would do nicely.
