Its like anything else, all things in moderation seems to do the trick. Humans are designed as carnivores as well as eating vegetables. A properly balanced diet is good for you and not so much of the fast food and saturated fats etc.
I think a lot of problems come from all the food additives and pesticides they chuck in these days. Too much of this food engineering rubbish will never be good, except for the trade!

I don't eat red meat very often, but I have no objection to it, in fact I rather like a good bloody steak. The issue is the Mrs was a veggie, but I have managed to get her back on to Poultry (she was still eating fish anyway). So we eat a lot of poultry rather than cook 2 meals. Think that could be a factor for others as well.

a) works canteen if I want a big lunch
b) carry out the odd time
c) restaurants
d) home cooked meals which lend themselves to adding meat if need be - homemade pizza, pasta (I can add meat to half of the tomato sauce for example). Doesn't add much to the cooking effort required.
e) BBQ in summer where I have meat, she has vegiburgers
The rest of the time, I'm happy enough to have the usual staples we have which include :
- homemade veggie lasagne
- pasta with olive & tomato sauce
- vegetable stir fry with cashew nuts on a bed of noodles
- roasted veg with potatoes
- vegi haggis, neeps, and tatties
- butternut squash risotto
- baked potatoes with wide selection of vegi fillings
- cheese & potato pie
- homemade pizza with veggi toppings
- vegetable curry with rice
- vegetable fajitas with rice, guacomole, and salsa
etc etc! Vegetarian doesn't have to be all nut roast and soya/tofu.
