Hippy Stew
I fancy making a vegetable stew or vegetable curry in the old skool festival / tipee circle style.
Does anyone have any recipes, or links to sites for such things?

My misses has one thats all vegetables which is the "No points" soup/stew from slimfast.
Uses loads of different types and is still tasty too, especially on a hot spud.

a stew. a stews a stew. put some stock in ome water and stew the vegetable. just bang some peas carrots taties onions tomatoes swede and sprouts in a tin and simmer for 3hrs.

You could always try Guinness stew...buy 12 cans of Guinness and whip this lot up. Leave out the beef if you don't want it and be sure to finish the other 11 cans before tasting

Given you have no meat, I'd be putting in some vegetable protein, ie beans - either bolotti, kidney, butter beans etc. Gives it a bit more of a nutty/meaty taste.
Also, a good splash (bottle if making a large portion) of red wine will also give it a more fullsome flavour.
Believe me, I can make a vegetable lasagne, and once it has borlotti beans and red wine in it, the taste is as flavoursome as a beef lasagne. In fact, most people don't even notice it IS a vegetable lasagne until you tell them after they've eaten it!

Also, you could roast your vegetables before stewing them for added flavour. ie, roast a tray of red peppers, onion, parsnip, carrot, etc (throw a bit of oil over them before roasting).

I always remember the better stews having barley, chick peas, and kindney beans etc to richen them up.

Yes, red lentils will also give it a bit of thickness.
Of course, you could combine it all into more of a risotto using some italian risotto rice (either Arborio or Carnarol types).
I have made a lovely butternut squash & chilli risotto many a time. Sort of like stew
