my wife has made ome fairy sponge cake things..normal another Mrs Tiggs quality product, however- these have all collapsed in the middle!

this was the first time she made the mixture using her new blender...could this be linked? mixed in to much air or something? any collapsing cake experts?

There's been a few but i'm jack of all master of none so put my two peneth in anywhere

Tiggs

I'd be inclined to agree with you and mrs tiggs in that case, try whizzing marg and sugar then add little of flour then one egg then touch more flour then last egg then flour and then essence.

Personally, would only use blender for mixing butter & sugar. Do the rest by hand.
