What counts as a hit and how do you count them?

I read somewhere that SN gets 30,000,000 hits a month
Is one hit when I log in

A "hit" is when any file is downloaded from a webserver by anyone. If it's a plain text page, that counts as 1 hit. If it's a text page with 5 graphics, that's 5 hits.
What people really want to monitor is "visits". Visits are calculated from IP address (which is the unique identifier of a single computer on the internet at a given time). If a single IP Address downloads several files within a set time limit (usually around 20 mins or so) this is a visit. This number is usually much lower than the hit figure, but is more representative of visitor numbers.
This depends on the Stats software you use to analyse your http logs as they determine these things slightly differently.

Then of course if you have an e-commerce site or a bulletin board you need to monitor the number of transactions or posts per unique visitor to see how successful your site is.
Additonally you can study paths, patterns and exit points to see where your site is working for you and where it isn't and so on and so forth.
Sorry just thought I'd add to the melee. Just been through this with a web marketing company who we are trying to work with who for some reason don't understand that number of visits isn't the whole story, but they've got lots of lovely graphs to show you ....

I remember that site too. Got the link from SeatCupraNet, but when I had a quick search for it, they'd cleared the section it was in. Anyone remember the site?
www.nufc.com was quite high up too - currently 10,000,000 hits a week I believe! Most of them from me probably...
