Generally I think the airflow over and round the car takes most of it away. They do have time to wipe it with the back of their gloves and you'll see them doing it from time to time. Obviously they put a form of polish on the visor to help the rain flow right off.
Any of the bikers here will know you only have to turn your head a little to one side and most of the water will run of with the airflow.

Fundamentally, it's because with a crash-helmet your eyes are very close to the visor and the droplets are so blurred you see 'through' them. Sprinkle some water on your sun glasses to prove it for yourself. It ain't perfect, but you can still see okay. Misting through breath condensing on the inside of the visor is a far worse problem. Ask any biker.
