Would you declare either of these...?
1. subaru lower grill, fitted by subaru...?
2. Scott Lowe stainless steel front grills, fitted by me...?
Any opinions..?

TBH mate, declare ALL of your modifications from standard spec. It will potentially save you from giving your insurers a 'get out' of any claim.
It shouldn't cost much, but will give you piece of mind.
