Changing the gauges in classic impreza

Not as easy as that, no.
The earlier gauges can be interchanged, the ones with dark faces/white numerals. They use a mechanical speedo.
After around 1997/8, the gauge faces went to white, with dark numerals, these use an electronic speedo. The two types aren't easily interchangeable.
Then you would need to take into account the shape of the whole cluster: will it fit your car?
Why, what are you wanting to do?

Long storey short...
My speedo cable broke and when the guy took my cluster out he broke the needles on the fuel and temp gauge.. He has offered me new gauges which he fitted but they don't work so he is giving me another set just fuel and temp.
Need to take old ones off and put these in should that work?

He doesn't have any like mine as I have white dials Lockwood ones. He just got black. I'm bit annoyed tbh.
Can I change the faces on the black ones and fit just the fuel and water temp?
