Default Oil levels/oil change questions

I just can't seem to get the oil level right on the bugeye, always checked in the garage when cold, car has to be driven slowly down the access road and reversed into the garage so is given a good 2-3 mins of very gentle driving before parking. Garage floor is as near level as you'll find. Just to recap car specs forged 2.5 with oil cooler (mounted on its 'side' hoses exit horizontally with mocal thermostatic plate) Grimmspeed AOS on vents, PCV still connected.

Checked to oil last Wednesday before a drive to Swindon (230 mile round trip) and was 1/2 way between L & F checked it again this morning there was no residual oil on the stick, in fact it didn't even need wiping but the level was just below the L mark. I topped up about 300ml then drove to work and back (20 mins each way). Checked it again a second ago (car was nearly totally cool, stood for at least 3hrs) and it's showing over full!

How can I get consistent readings? Also I'm about to do an oil and filter change, is there a way to make sure I get as much oil out of the cooler as possible? (Apart from remove it!)

Favoured technique seems to be warm engine on flat surface.
Turn off engine, remove dipstick for five minutes, wipe and then check oil level.
Don't know about clearing out oil from the cooler etc.

I thought it was just me on my 03 wrx i can Check it stone cold and get different readings with out the car bring used!!
