oil pressure gauge - Annoying!!!

Got a feeling that dealer is talking out of his rear orifice.
A good engine, using the right grade oil should show around 3bar at idle and 5.5 to 6bar above 2-2500rpm at a sump temp. of 80c
I`ve found that Scoobs run higher oil pressure than any other car I`ve owned. It must be a gauge problem as nailing it with zero pressure= BANG!

can any kind person please (please! - desperate here) describe the normal readouts of an oil pressure gauge. mine was on the car when i bought it, and i'm having trouble working it out...
when it give very light throttle it goes up to around 6 (from 4)on the scale (is that bar - maybe) but heavy throttle it drops to bu**er all! - dealer thinks this is normal as per forester (?)
however, all of the time during normal driving, it's either way up to the end of the scale, just about right, or totally drops to nothing!!!
the car's just been serviced and their were no reports of oil issues, still - very annoying!

not sure m8, i read somewhere that most sensors just replace the existing one, but like i say totally not sure.
the dealer said that a total drop is expected when nailing it - i'm not at all technical so he could be wrong or talking poo.
