the standard ones are metal!
they are 3 layers of metal, you may be getting confused with another type which are called cometic and are not completely metal and are thicker i believe.
The std gaskets are more than good enough for most rebuilds i've been told.

Early cars had "composite" head gaskets fitted at the factory. These were later revised to the 1.4mm multi layer steel gaskets, up to, and including '98, where from '99 on they fitted a thinner .6mm multi layer steel gasket as standard.
The Subaru multi layer steel head gaskets are very good, and for the sake of the difference in price, I would always suggest fitting them over the composite.
"Cometic" is the name of an after market gasket manufacturer, who make gaskets out of various materials, for numerous cars.
Most common for the Subaru, is a copy multi layer steel gasket, which can be made in various thickness's.
