Default Changing Head Gaskets

Hello everyone new to scooby net but have been looking as a guest for weeks and found that people on here know what there talking bout.
Now for the question Ive got the engine out of my95 wrx and replacing the head gaskets ive heard 2 things
do you skim the heads or not?

you need to check if they are flat.. if the surfice is flat and unpitted / scored then no need to skim the heads. Flat as in there is no warping of the heads and flat as in the surface is flat..
If one needs skimming them skim them both to ensure the compression is equal.
