There are quite a few good oils to choose from, personally i go for Mobil Motorsport 15/50.
A quote taken from www.howstuffworks.co.uk :
Multi-weight oils (such as 10W-30) are a new invention made possible by adding polymers to oil. The polymers allow the oil to have different weights at different temperatures. The first number indicates the viscosity of the oil at a cold temperature, while the second number indicates the viscosity at operating temperature.
At cold temperatures, the polymers are coiled up and allow the oil to flow as their low numbers indicate. As the oil warms up, the polymers begin to unwind into long chains that prevent the oil from thinning as much as it normally would. The result is that at 100 degrees C, the oil has thinned only as much as the higher viscosity number indicates. Another way of looking at multi-vis oils is to think of a 20W-50 as a 20 weight oil that will not thin more than a 50 weight would when hot.

Not a Scooby driver, however, ask your dealer on this for Subaru recomendations for your car. I have always been advised oil in modern cars (specially high performance ones) is critical to engine wear- I have always used the best fully synthetic oils like Castrol RS. Oil change intervals (outside of normal service timings) depend entirely on car usage- Mitsi EVO's standard service is I think 4500 miles, if u r driving your car hard at high revs, can be every 2000 miles

Motul 300V Competition 15W/50 is classed as one of the best.
As long as you go for a decent fully synthetic that isnt too thin , ie below 10W, then you should be fine.
I use Mobil as i reguarlly change the oil myself (3000 miles at most) and its been fine. People say that 5000 miles or 6 months is o.k but since i service the car myself (i intend keeping it till its worthless) i do it earlier.

There are a few good oils. Prodrive apparently advise the privateer World Rally Car teams to use either Motul 300V 15w/50 or Mobil 1 Motorsport 15/50, which is about as good a recommendation as you'll get. If those oils are up to that sort of application, they'll be fine for a road car.
As for oil change frequency, under ideal circumstances around 3500 miles for normal road use. If you do a track day, change it immediately afterwards.
