From my own experiences this weekend (track day), I've come to the following conclusions: 1) Removing the engine undertray does NOT lower the oil temperature 2) Motul 300V does not lower the oil temperature 3) The water temp gauge is useless 4) The Impreza DOES need an oil cooler!
Engine oil temperature reached 130 degc during one session. I'm running 1,1 bar boost, downpipe and silencer.
Anyone who disagrees on my conclusions?

Yeah, id go along with that.
A chap i know does track days in his RX7 in Japan, modded to around 370bhp.
He said that after about 3 hard laps his aftermarket water temp gauge was reaching around 120d.c, time to cool down. However, the cars std temp gauge was reading normal!
The standard temp gauge isnt worth sh!te.
A good oil like Motul WILL offer superior engine protection but it wont run any cooler, that you would notice, than any other oil.
