Occasional cooling problems. Any ideas please?

On leaving the'Midlands meet' last week, as I was crawling through traffic, I noticed my water temperature gauge was rising up to approx 3/4. Not knowing what else to do, I put the heater on full blast, and the gauge dropped quite quickly back to 1/2. When I got home, I noticed that a smallish amount of coolant had come out of the overflow pipe. I lifted the yellow cap in the 'overflow bottle' or whatever it's called and the water was bubbling away.
Also, the cooling fans were ages before they went off, yet the radiator felt cold to the touch.
This last happened after the journey to Trax last year (as far as I can remember), exactly the same symptoms. At the time, I had just had the coolant changed by Roger Clark Motorsport (who service it for me) so I left the car with them for a day, but they couldn't find anything wrong with the car. They left it standing ticking over for 45 minutes or so, the gauge stayed exactly half way, with the fans cutting in and out as normal.
I forgot all about it after that, putting it down to a possible 'air lock' in the system, but as i've said, it did it again last weekend.
Both times it has happened after a period of fairly hard driving, in normal day to day use it NEVER happens.
I don't believe I have any head gasket problems, there is no oil/water contamination at all, there is no steam from the exhaust, and it loses no coolant at all normally.
Please give me some ideas, I am completely stuck, and also slightly worried!

The temp gauge reads the same with coolant temp in the range 75 to nearly 100 deg C.
When hot check the top and bottom hoses (top left and bottom right of the rad). The bottom hose will be cold, that means no circulation thro the rad and the thermostst is the first port of call.

I have a feeling my thermostat is sticking, at low revs it won't open but blip the throttle for a few seconds and the temp drops back down nicely.
Are they cheap to replace or can I just clean up the current one?

Themostat cost me 20pounds - not that much really, but I did have to pay 7pound postage/admin costs! so more like 13pounds if they have it in stock.. that is Jersey for you!
The part number is the same for the 98/99 themostat btw. I just had mine changed on my wrx sti version iv type-r coupe - and the uk part fitted fine.

I know thermostats are considered consumables and are normally quite cheap. Although I'm not sure of the cost for an Turbo Impreza.
I know that on Rolls Royces, the thermostat is changed out with each service, so not to cause inconvenance to the owner!!
