If I de-cat my my00 2.0 sport will it fail the mot test on emissions?

er, Yes, as the documentation for the vehicle will state it was originally fitted with a cat, so emission figures will be "expected" to show such when tested.

It doesn't matter what it says on the tin!! It's what registers on the gas analyser that counts.
So to get an mot each year do you guys leave the cat on or just put the old system on once a year for mot's?

At a lambda of 1 (which the machine checks) it would be very difficult to get the CO & HC down enough to pass without a cat. If you run a lambda over 1 you might get the CO & HC low enough, but the NOx would be sky high and remain so even with the cat. There is a sharp rise in NOx post cat as lambda increases over 1 hence the demand for the lambda to be 1. This is the only point where all three gases can be at optimum level. NOx is never good without a cat.
