Are these physically too difficult to fit in an impreza or could they be a decent base for a project engine?
With the extra displacement, surely the power potential is there?
Has anyone looked at this or is there an obvious reason why this isn't being done?

Pat, armed with a hammer and swearing? Never 
Oh, and from what's I've seen it fits, surprisingly well...but there's not much room for things like turbos, a radiator, batteries, intercoolers etc
