The iPhone 3G can be jailbroken, thus allowing third party apps to be installed, but it is not presently able to be unlocked (removing the lock to the mobile network) thus I'd say there is a market for the 2G iPhones, as they can be jailbroken and unlocked, thus allowing you to use them on any network you like.
As Mart states, hackintosh is a good place to have a sniff around, specifically have a look here which details how to use the Pwnage app, which is one of the simple and best ways to get the 2G jailbroken and unlocked. I know a couple of people who have used Pwnage and they aren't the most tech savvy types.
If you decide to put it on ebay then I would suggest unlocking it first, as there will be some people out there who just don't want to unlock it themselves, so it already being done will be a bonus to them.
If you decide to keep it and stick it on a network, do not forget about the data side of things. The last thing you want to happen is to use the web features over the EDGE connection and rack up a large bill because you don't have a data plan.

Hackint0sh can be a little daunting, the best tutorial I've found is here
iClarified - Tutorials - iPhone
All files needed are linked and the instructions are top notch.
I have a 2g unlocked iPhone for sale and quite likely a 3g iPhone for sale as I'm one step from buying an officially unlocked version.

You heard wrong. The 'hack' will activate the phone and it'll work just fine. What you don't want to do it connect it to iTunes and hit the update button when an update is available.

If you want the phone for practical use then your best off with it on O2, if you want it for the "pose" factor then get it and unlock it.
Your biggest issue will be with networks not having Edge, so you wont get those quicker download speeds, the only network that has Edge implemented is O2, so as you can see.....
