by default, if you are running a UT server, it connects through udp port 7777 for the actual game serving and tcp port 7778 for remote webadmin/checking who's actually playing.

UT's default ports are set to 7777 and 7778 for both server and game.
For instance, you have a server on 192.168.0.1 running ut and you then run UT from a client machine and type in that address in connect to server and it should go straight through, as UT looks on 7777 by default, methinks. If you add a favourite in, then the information displayed about what player are playing etc comes through on port 7778, if I remember correctly. if you are trying to connect to a UT server running on a custom port, say 7787, you would type in the following: 192.168.0.1:7787, where 192etc is the server ip address. Usually in this sort of the setup the info port would be 1 above on 7788.
Pretty sure about the above, but I don't defaults for my servers.

Righty, finally got UT playing on internet servers through the firewall.... for anyone that cares, these are the ports that were needed....
Browser = TCP 28900 outgoing
Server query UDP 7778 send and receive (ping)
Gameplay UDP 7777 send and receive
